Phở Chay is our take on a vegan Vietnamese phở. The broth is slowly simmered for a minimum of 5 hours and served with either organic pressed and sustainably sourced Tofu or meaty Shiitake Mushrooms, both come with pak choi and our fresh garnishes

The Power of Plants

Whether vegan or carnivore, everyone should try our Phở Chay at least once. Creating the broth for this dish gave us a new-found respect for the power of plants.

Vegetables, fruits, spices and herbs all cook together to give this dish its bold, nourishing backbone. Served with silky rice noodles, vibrant garnishes and umami-rich tofu or shiitake, this is one vegan dish that proudly holds its head high.

Vegan phở broth - we gently simmer a selection of vegetables, fruits, herbs and spices for 5 hours to create a lightly spiced broth.

Organic pressed tofu - we have specially selected a premium, organic and sustainably sourced pressed tofu which is delightfully firm but soaks up the broth to make it a perfect addition.

Shiitake mushrooms - whole shiitake mushrooms can be sliced, diced or thrown in whole. We suggest frying these in a little of our PHOMO chilli oil

Pak choi - a whole pak choi provides crunch and juicy freshness to your phở. Fry gently, char for a smokier flavour or steam before adding to your bowl.

Gluten free rice noodles - hand selected traditional phở noodles are provided. These need to be cooked for 5/6 minutes in boiling water.

Spring onion - to add crunch to your bowl this can be sliced or diced and served raw, or for a lighter onion flavour you could fry it for a few minutes.

Lime - added at the end, a squeeze of fresh lime will bring the broth to life with bright notes.

Birds eye chilli - watch out, these are hot! We prefer to add these as very thin slivers at the end, they add a delicious heat to the phở. If you are not a fan of spice, you can just leave these out!

Beansprouts - fresh, whole beansprouts add that extra crunchy texture to your bowl.

Coriander and Thai basil - these fresh herbs should be added at the very end, they add zing, crunch, freshness and flavour to the phở. Chop, tear or throw in whole, the choice is yours!

As we are sending fresh food, orders are sent using a leave safe method, which means that even if you are not in, the courier will leave your order in a safe place rather than returning it to the depot. If you would like your order left anywhere else please let the courier know.

Orders over £40 qualify for free delivery, the courier cost for orders below £40 is £4.95.
